Veraison is the end of the first growth phase of the grapes and marks the beginning of maturation. The color transforms from the initial green common to virtually all varieties into the ruby, purple and violet of red varietals (the whites remain green).
The transformation is stunning and takes place over the course of a week or so. It can be clearly seen in individual clusters and even single grapes.
